SPANISH TOMATO TOAST

Servings – 4

 

INGREDIENTS:

·       2 Ciabattas Buns sliced into 4 pieces OR ½ of loaf, Italian or French

·       2 Large tomatoes

·       2 Tbs Olive Oil or Extra Virgin Olive Oil

·       2 Cloves Garlic, halved

·       Salt/Pepper to taste

·       Handful of Parsley or Cilantro, finely chopped (Optional)

 

SUPPLIES:

*Toaster OR Oven

* Grater

*Large bowl

*Chopping board

* Knife

*Serving dish

*Spreader or Spoon

 

DIRECTIONS:

1.      Turn oven on convectional broil to 400F or 2 (depending on your oven settings.) Place bread soft side up on the baking tray, drizzle with olive oil and toast lightly until golden brown.

2.      If using a toaster, toast bread until golden brown and drizzle with oil after.

3.      Over a large bowl, grate tomatoes using large holes.

4.      Discard the skin.

5.      Season tomatoes with salt and pepper.

6.      Once the bread is ready, rub the halved garlic

7.      Spread tomatoes and drizzle with more oil.

8.      Sprinkle with herbs.

9.      Serve immediately.
